Cucumber Dill Hummus

So today is Friday and my mom and I wanted a light dinner. So I decided to make some hummus and pita bread. My mom absolutely loved the hummus. She basically licked the bowl. Want to know what’s even better? Its so easy!

What you need:

1 can of garbanzo beans (Chick peas)

1/2 Lemon

1/2 Teaspoon of Salt

1/2 Teaspoon of Dill (more or less)

1 Cucumber

10 Spinach leaves

1/3 cup olive oil

1. Drain and rinse your garbanzo beans. Put the whole can into a blender or food processor.

2. Cut lemon in half and juice it. I only used a half of a lemon, but you can use more if you want. Put the juice into the blender. Add the salt and olive oil. Blend.

3. Add your dill. Cut about a 2 inch chunk of cucumber and dice it. Put it in the blender. Break apart a few spinach leaves into small pieces. Add to blender.

4. Make sure everything is all blended together. Put in a bowl and let it sit in the refrigerator for about 30 minutes so the flavors can soak together.

Chickpeas are very healthy because they do not contain any cholesterol or saturated fats. They are also rich in protein. Also, the lemon packs great antioxidants. This is a great dish for vegetarians, vegans, and people who are gluten-free!

When ready to serve, you can slice the cucumber like I did, or make your own design. Be creative! This is a great snack for anytime of day. It is super healthy and can be eaten with almost anything.
